Kullu is apple country, and the pickle jar is where the firm, tart ones end up — the fruit that never makes it into a crate. Cut by hand, salted, and turned through cold-pressed mustard oil and our own ground spices, then left to sit until the sharpness rounds off. Sweet, sour and hot in the same spoon. Good with parathas, khichdi, or plain curd rice.
