Peaches come off the hillside in July, and the ones picked slightly under-ripe hold their shape in the jar instead of collapsing into jam. That is the whole trick. Hand-cut, packed in cold-pressed mustard oil with mustard seed and hill spices, and aged until the fruit takes the masala all the way through. Sweet at the front, hot at the back.
